Much of March has been gray, cold, and snowy....
But we ate well...
And I saved seeds from the gorgeous Seminole Squash to grow my own for next year...
And amped up my nutrition with these berry/kale/beet/coconut smoothies...
And was gifted with a dozen beautiful eggs...
That were bright and luscious...
On yet another snowy day...
On which I made coconut-maple snow cream...
Then the new season asserts itself...
Only to be assaulted yet again...
Despite the snow, I know Spring is coming!
Sort of like life, yes?

ReplyDeleteI sort of made up my own recipe for the smoothie, Vee. Mixed frozen berries, full fat coconut milk, raw kale, raw beet, and a little water. The plastic rooster isn't necessary, but I highly recommend finding a sweet reminder of your grandchildren's last visit to make you smile while sipping!

Amen to that, Cheryl. God promises, we trust! The coconut maple snow cream... ah it was so good. I wished that I could save it for one of our scorching summer days. I guess I'll just have to resort to the regular kind of ice cream. Bummer!

DeleteMarch has kind of been like that here, one day nice then snow or sleet and cold temps, the cycle repeated for the entire month of March. Spring looks like it might be here though, our trees are beginning to bud
